Mediterranean Salad
A classic salad, diced small that can pair with any main dish.
You will need:
- 2 cups chopped romaine lettuce or mixed greens
- 1 medium chopped red, white onion or 2 scallions.
- 1 medium diced tomato
- 1 medium diced English or Persian cucumber
- 1 medium (any color) bell pepper
- 4 tablespoon olive oil
- 1 teaspoon sumac
- Lemon juice
- 1 teaspoon pomegranate molasses syrup
- 1 tablespoon Apple cider vinegar
- 1 tablespoon dry crushed mint
- Salt (optional)
To a large bowl:
Chop coarsely or finely (we prefer a smaller chop) lettuce, onion, tomato, cucumber, bell pepper. In a smaller bowl, mix the wet ingredients to form the dressing: olive oil, sumac, lemon juice, molasses, vinegar and salt (optional).
Dress the salad right before serving to avoid losing the crispness. To garnish, rub in between your hands the dry mint for a finer finish. Enjoy.
